WATER MELONS.

UNUSUAL. DISHES. iVlelon cocktail. Mix some of the fruit, cut into small pieces, with some broken grapefruit pulp and an equal quantity of chopped pineapple. Cover with a syrup which can be flavoured with ginger, maraschino, or curacao; add a squeeze of lemon juice, and decorate with a tiny piece of mint. IVlelon Salad. Slice a piece of peeled and seeded melon, and marinade Well with French dressing. Add a handful of fresh coconut grated in large flakes, and mix well together. Make a bed of young lettuce, heap the melon and coconut on top, and decorate with tiny balls of cream cheese, tinted pink with carmine or beetroot juice. Stuffed IVlelon. Soak the peeled and seeded melon in a syrup flavoured with maraschino, and fill with a mixture of fruits, such as white grapes, peaches, apricots, white or red currants, cooked prunes, chopped and mixed together with sugar and a little more maraschino. Melon Water Ice. Skin and seed a melon weighing about a pound and a half and pound the pulp till smooth. Add half a pint of boiling water in which four sheets of gelatine .have been dissolved, the juice of one orange and one lernon, 3 ounces of sugar, a wineglass each of white rum and maraschino syrup, and '{oz of ground ginger. Stir in a pint of water and freeze.
