AFTER THE PARTY.
THINGS TO KNOW. Hoslesses sometimes regret the sight or plates still piled with sandwiches after a tea or supper; they misoalculaed their guests’ appetites, but the sandwiches need not_ be wasted. There arc delicious dishes to be made with superflous sandwiches after a party. Any kind of meat paste or ham sandwich makes a good entree, hut there should be no crusts. Make a neat pile of _ the sandwiches on a plate to go in the oven, and prepare a white sauce with a dessertspoonful of butter and the same of Hour, blended over the fire with enough milk to form a cream as thick as bottled 1 mavonaise; add a dessertspoonful of grated cheese —salt and pepper to taste. Keep tills sauce hot while the sandwiches are heated through in the oven; if they are very dry, pour over a few spoonfuls of broth. When heated, open the oven door and pour over the cream sauce, sprinkle some more grated cheese on top, and bake until it lias begun to change colour. Serve Promptly. Pish cake is a similar entree made with fish paste or sardine sandwiches, and anchovy or flsh paste to flavour the cream sauce; for economy the cheese may be omitted. jam sandwich pudding is a favourite nursery dish. It is merely a superior bread-and-butter pudding made by fitting the 'sweet sandwiches into a baking dish and pouting over a thin custard, which should bo well sweetened, as the bread In the sandwiches requires sugar. Bake until brown on lop.
