Sponge Cake. Time 1 hour. Boz. Sifted Sugar. 1 Teaspoonful Baking Powder Boz. Corn Flour. 6 Eggs Method: Measure out the ingredients. Butter and flour a twopound cake tin. Beat the eggs, sugar and flavouring for half-an-hour, or till thick and creamy. Mix the corn flour and baking powder well together. Sift it into the egg mixture very lightly and gradually, mixing with a fork or iron spoon. Pour at once into the prepared cake tin, which should only be half full, as this cake rises very high. Put at once into a quick oven and bake for about three-quarters of an hour. Remove from the tin and cool on a wire tray. Class 471 Lemon Sponge Cake. Time 1 to hours. 4oz. Corn Flour \ Teaspoonful Baking Powder 4oz. Sifted Sugar. 4 Eggs Grated rind of half . a lemon. Method: [Measure out the ingredients. Butter and flour a onepound baking tin. Beat the eggs and sugar for half-an-hour, or till thick and creamy. Sift in the corn flour very lightly and gradually. Mix with a fork or iron spoon. Add the lemon rind and baking powder. Pour into the prepared cake tin and bake in a hot oven for about one hour. Cool on a wire tray. Class 472 Plain Chocolate Cake. Time, 1 hour. 2oz. Corn Flour A teaspoonful Baking Powder soz. Flour 4oz. Butter or Margarine. 4 Eggs 3oz. Breakfast Chocolate Powder Pinch salt. Few drops Vanilla Tablespoonful Milk Method: Measure out the ingredients. Butter a one-pound baking tin. Beat the butter and sugar lo a cream. Add the eggs separately and beat well. Arid the chocolate powder and mix well. Mix the flour, corn flour, baking powder and salt well together, and add gradually to the butter mixture with a tablespoonful of milk. Flavour with vanilla.’ Pour in a prepared cake tin. Bake for one hour in a moderately heated oven. NOTE 2 eggs may be used and extra milk.
