IN view ot me sieaay increase ci soeep iu Now South Wales, the que-tion of boiling down—a portion, at least—the surplus is now being discussed. The following will show that boiling down is, after all, but a vary poor way of disposing of good mutton: —Taking wethers of line quality, the average return of talioiv per sheep may be put at, say, 221bs. That at 2Jd per lb (£2l per ton) would give a return lor tallow of 4s which, with the price of the skin at an average for the year at, say, Is 9d, would make a gross return of about 6s lOid per sheep to pay the expense of droving, boiling, etc., and give the owner a return for breeding, keeping and fattening the sheep-a return at which he cannot live.
