THE FROZEN MEAT TRADE,
Messrs. Henry S. Fitter and Sons report —Since our lust reoott trade generally has improved. The weather being cold, the demand was Rood, and priced remained firm. Home-killed mutton has been fairly plentiful, but the demand has been better and prices hardening. Just before Christthe demand is principally for prime beef, game, and poultry, but there is also usually a fair demand for good mutton, and (if we had them) we could easily havo made 3s for choice short-legged Downs (New Zealand); but unfortunately, just now there are very fnw gond New Zealand sheep in London, and many butchers have preferred paying more money f'-r home-killed rather than have middling New Zealand mntton. The steamers are now arriving with slvrt cargoes, and stocks are gradually diminishing. Thus, with a probability of a better demand in the New Year, we may look for more satisfactory prices. Wβ hear th;i,t some New Zealand mutton shippers are auxious to sell forward for the coming season, and ■ire ottering their sheop at very low prices. We should, however, strongly advise them (if they have any good quality sheep) to ship on their own account, for we are expecting better results this next summer. They supply of American beef haa been shorter and prices better. This has enabled in to clear some of the back shipments of frozeD beat. The frozen beef has been so much distributed in tho market, and holders were so anxious to sell that all efforts to obtain better prices have been unsuccessful. There is still a large quantity ot Queensland beef on hand, which is turning out in very good condition, and has been selling fairly well at about Id per stone less than New Zsaland beef. To-dav'e prices are as follow :—Scotch sheep, 4s 4d to 4s 8d per fttone of 81b : English sheop, 4s to 4s 4d ; Continental sheep, 2s 8d to 4s ; ewes, 3s to 3s 4d ; Canterbury (New Zealand) sheep, 2i 4d to 2s 7d ; Queensland sheep, 2a 2d to 2s 3d ; Sydney sheep, 2s 2d to 2s 3d : River Plate sheep, 2s t-> '2* 2d ; New Zealand beof, hind qnarems, Is lid to 2s : New Zealand beef fore quarters, Iβ 10d to 2s ; American beef, hind quarters, 3s 4d to 4s ; American beef, fore quarters, 2s 2d to 2s 6d.
