The fact that, the compound of fat known as "bulterino" is being manufactured to aI a i-cu I'vtent and sold as real butter in Melbourne was referred to by a deputation of dairymen which waited 011 tho Minister of Agriculture recently. It was stated that 50000) of butterine a weekwere bcin?dispos3il of. and as the compound could bn made at the cost of fid a lb, and liianipulat'd so as to closely re.-emble real butter, the temptation to pass it otf as such was very great. Tho Minister {adds the Argus) was able to inform tho deputation that ho had already given attention to the subject, and thot ho proposed to suggest legislation prohibiting the colouring and piiiihnrjof the material so that the public could not be deceived. Mr Graham exhibited thr.'e h df|i itmih of butterine which had been bought by Mr D. Wilson, the dairy expert, of the Agricultural Department, as real butter. In every respect, the butterino resembled the genuine which was shown of and in flavour it was not dis-innlar, but for a disagreeable " after ta-te" which it. leaves in the. month." It was also noted that the butterine was quite hard, while tho butter yielded readilv to tho touch. _
