BUTTER ANALYSIS.
Ouu respected settler, Mr Henderson, of Ivawanui, hss just received the result of an analysis, by the Colonial analyst, Mr Pond, of three samples of butter sent to Auckland a short time ago.. Mr Henderson lias attained a local celebi ity for his matmfacUire of butter, and it is gratifying to find science corroborating the general opinion in regard to it. It may bo noted that these samples were not in' any way specidlv prepared, but obtained fiom what Mr Henderson is in the habit of supplying to the local stores. I append the analysis and Mr Pond's remarks thereon: — Water Salt Curd Butterfat Xo. 1 sample lO'Ot! 1"217 0'704 87 Ml!) Xo. li sample (salted) B'o 2"JT> '825 88-170 No. 3 scruple (unsalted) 12-7 'Hi - S(J Sfi.osß "Tliesfi samples of butter were all of excellent quality, the flavour and colour being all that could be required inNo«. 1 and 12; the third sample being, as intended, deficient in salt, only a trace being present. The water in No. 1 is decidedly low, which can be said with regard to the curd in sill three samples, and to tt.e careful removal of this material is ehiefiy due the ability to keep butter, without any appreciable change, for a lengthened period,"—! am, etc. J. I'OND, Colonial analyst.—Mr Henderson deserves great credit for turning out such an excellent product, and is to loe congratulated on its standing tho of the chemical laboratory. Any one desiring to know tho proportion of foreign matter, curd, etc., to the amount of the true butterfat, may do so roughly in the following wimple manner:—Put the samole in a small, transparent glass bottle, a St. Jacob's oil bottle does very well, and stand this a few minutes in a cup of hot water till the contents are thoroughly melted. The foreign material at once sinks to the bottom, the true fat floating at tho top. Allowing this to cool, the different layers become very apparent and the proportion is then readily determined. —(Occasional Cor-
