Water for Dairy Cows.—We have lnurned within the few years the iinporlnnoo of dairy cows having- pood water to drink. Professor Law, of Cornell University, caused some cows to drink for several days from a stagnant pool of water , and lie found their milk full of livinir organisms. ITe subsequently demonstrated that exactly the same organisms lived in tho stagnant pond. By the interchange of the pond and milk animalcules it was found that they lived equally well in each. Salt in Butter.—Salt gathers on the on',side of butter h»><v>ii«n of tbe evaporation uf water contained in the brine funned by the salt i.dded for seasoning the butter; tho brine being crowded out of the butter by contraction from change of temperature. It occurs when too much moisture is left in butter when working it, ai d when there is so much water in the composition of butter that it separates fio -iy and forms an excess of brine when 6alt i- added. In the latter case the butter contracts from the liberation of moisture without chanere of temperature, just as curd contracts from liberitinn i >' its w': y by the action of rennet, or as lean meat contracts by the separation of its moistsre from tho application of salt.
