NEW ZEALAND CHEESE IN LONDON.
Nk\v cheese is gradually growing into favour in the British markets. One opinion said that these cheeses left practically nothing to be desired in fpiality, Inst if thu flavour had been a Ji-tlo milder it would have boon better. The difference between largo and small cheese di.l not atlect the price in the case quoted, though in other markets a preference would bo shown for the larger. Thu ''friction" in selling value between tho cool chamber and ordinary cargo portion was not fairly indicative of the difference in condition, as at the moment there was a much stronger demand for jOs and 52s cheese than for 50s eh.ese, owing to the temporary abund.-i.icc of fine American produce, which had been held over for a better market. Both parcels of cheese were sufficiently ripened, but the ordinary c'ugo portion bad been slightly heated, was consequently stronger flavoured, and had also been iightly knocked out of shape. Although the ager.ts had made enquiries, they had not been able to find that any ventilating arrangenu nt* had ber-n made on the \eesel; and the cheese, as far as they could'earn, travelled as ordinary cargo. The price 81' cured for the fifteen eases brought in cool chamber (oOs perewt), was the price of best American on the day of sale, and is the highest figure reported for new season's make of New Zealand cheese. At o'2-i per ewt the bulk of the consignment was relatively better sold. The style of packing cheese shows no improvement yet. It was hoped that the new season's produce would be shipped in round boxes singly ; ami it was asked why this system was not adopted by colonial shippers, despite repeated suggestions from the British consignees.
