A NEW INDUSTRY.

Mb, Claus Si'heokles, as whs announced in the New.s Letter some time ago, brought with him on his return from Germany a thorough knowledge of the science of extracting sugar from beets, and also a largo quantity of machinery for carrying out fuoh an enterprise. He is now engaged in awakening tha farmers of California to the fact that by cultivating the beet they can make money. This is a sort of missionary work that should not be left entirely to Mr Spreckles. The press, particularly the rural press, should continue to urge upon its readers the propriety of engaging in the work of raising this vegetable, and thus add millions to the producing capacity of the State, as well as contribute to their own prosperity. The cultivation of the beet is among the the easiest of agricultural operations, and one to which a large proportion of the soil of California is particularly adapted. To those who have the land its cultivation involves little or no investment of capital. It is an exceptionally easy crop to both plant and gathc, ani is almost impervious to the. climatic vagaries which often xAay sad havoo with other and more sensitive crops in California. A long pull and a strong pull, and a pull altogether, just at this time may result in California, a few years henee, being able to supply a large proportion of the Americau demand for sugar.
