The nitrogenous matter is present to a greater degree thar it would be in flour prepared from this wheit, while the retention of the germ in the meal adds greatly to its value as a flesh-producer, owing to the large amount of albuminoids thus retained. The ash is heavier than in ordinary wheat flours, aud as this is chiefly composed of pho-phatvs which are very important as bone forming materials, it ill be seen how beneficial this food will prove to children. lam of opinion that this preparation will prove of great value, but to ensure its easy assimilation by the system it will require care in cooking, and will need at least thirty minutes at a boilin ’- temperature to attain tins result.
