The nitrogenous matter is iresent to a greater degree than it would be ti flour prepared from this wheat, while the etention of the germ in the meal adds ;reatly to its value as a flesh-producer, iwing to the large amount of albuminoids hus retained. The ash is heavier than in rdinary wheat flours, and as this is chiefly omposed of phosphates, which are very mportant as bone forming materials, it will •e seen how beneficial this food will prove o children. lam of opinion that this prelaration will prove of great value, but to nsure its.easy assimilation by the system t will, require care' in cooking, and will ieed at least thirty minutes at a boiling emperature to attain this result.
