JOHN LAMB, OF TIIIJ Auckland Roller Mills arid Biscuit Manufactory, FORT-STREET AUCKLAND, TAKES the liberty of intimating to the public that he has put on the market a PATENT PORRIDGE MEAL MADE FROM PUKE WHEAT, Which is much cooler than oatmeal, and it will be seen from the analysis of Mr J. A. Pond, Colonial Analyst, which is annexed, that this is a most valuable food, and is giving entire satisfaction. It can be obtained at most of the leading grocers in Auckland and suburbs, in seven pound bags and upwards, and brown bread made from this meal from the leading bakers. In making the porridge, the water should be boiling before the meal is put in. Auckland, February 12, 1887. J. Lamu, Esq., Auckland. Silt, —At your request I obtained a sample of your Porridge Meal from your Mill on the 31st ult., and have examined it with the following results : — Analysis : Moisture 12*85 Soluble Albuminoids I*lo Sugar, Gum, and Dextrines ... 5*15 Gluten ... 7*06 Cellulose 2.58 Starch and Fat 70.30 Ash ... *96 100*00 The sample was produced entirely from wheat, and these results show the preparation of a valuable article of food, from which a large proportion of the bran has been removed. The nitrogenous matter is present to a greater degree than it would be in flour prepared, from this wheat, while the retention of the germ in the meal adds greatly to its value as a flesh-producer, owing to the large amount of albuminoids thus retained. The ash is heavier than in ordinary wheat flours, and as this is chiefly composed of phosphates, which are very important as bone forming materials, it will be seen how beneficial this food will prove to children. lam of opinion that this preparation will prove of great value, but to ensure its easy assimilation by the system it will require care in cooking, and will need at least thirty minutes at a boiling temperature to attain this result.
