ELDKKUhKKY WI.VE. — Those who Wish to utilize this wild fruit can de so by making it into wine, according to tinfollowing directions : Pull the elderberries when full ripe, p-ess the juice out through a cloth. To a quart of the juice add a g.illoi: of rain or river water ; when thus mixed, to each gallon add 2^ pounds of common brown sugar. Mix the whol»well, and hang over the fire in a brass 01 copper kettle, and let it boil gently foi an hour and a half. To 35 gallons thus boiling, put in, inclosed in a bag, \ pound of allspice. When boiled turn it into an open vessel, let it stand till about blood warm, throw in a slice of toasted bread dipped in yeast ; let it work for twelve hours, then strain off through a hair sieve into a clean cask. After thus barrelled, add five quarts of old whisky ; throw into the barrel }- pound of cinnamon and two or three nutmegs. Let it stand for a twelvemonth, then use it. and you will find a wine, though not as strong as Madeira, fully as agreeable. The magnets are better now than when new. This experiment was prompted in my desire to prove magnetism bears to heat as close a relation as electricity.
