RURAL NOTES.

I'Hh HhATINtJ AMI bIIKKIVO OF Otu vm. — Heating the milk slightly, sa>s mi Aineiicau coutempoiary, cauies the ci vain to live nioie rapidly at tliu and tins will make the butter ionic more quickly and be of better (guilty. Much of the inferiority of u intei buttei is due to the fact that the ueam rises slowly and a fungus forma on it before it is churned. .Stirling the cream a little, at least oucu a day, u is very impoi tant where only one yon is kept, and the ci earn is a long tune accumulating in ijuautity sufficient for cmumng. Unload this la dune, the butter will be apt to lia\c a bitter taste. Tut. Dairy Products ok Nev York. —The linpoiUnue of the dairy interest in the State ot York may be pet haps bcttui appicewted after a study of tbo following liguius fioni the annual report ot the f>cate Daiiy Commissioner, aud rciiK'si'iitiiig the total value of davy pio hiots ot tiie state oi 1884 :— Milk, 1(j.{,511,2til quarts, value, 11,5G3,5bl dolt. ; chetse, 13G,223,U.J4 lbs, value, 14.«84,(>.i0 dois. ; butler, 127,541,821 Iba , value, 31,835,445 dola. ; cieaoi, .i, 104, 144 gillons (estimated), value, 1 ,?SSM,t>l4 ilols. ; number of calvetf, 1,500,000, value, 1,000,000 dois Employed in the dauy— aeiea of' laud, 4,54'),2.>0 ; inileh cows, 10b',410 ; value oi Uud, '251,179,540 dois.; value of cow a, 35,074, 300 dois. ; value of machinery employed, 10,U15,185 dois. ; total value employed, 201,827,775 doll. ; value of pioducts, 58,433,589 dole. ; totil, 7,314,902,125 dois. To this must be added the value of cream, 1.893,814 dois. ; ami of calves, 1,000,000 doK WiibAT Ukowim; in tue United Stated — The aiea undir wheat cultivation this winter in the United Stated is estimated at 2,300,000 icies less than last year. At two quarters per auie this would entail a i educed production of "about 41 million quarters next season, being about the extent ot the exports of w heat troiii the United States to Englaud last year- As the cause of this reduction of aiea the low prices may freely be alleged, a laige part of the vvoidt placed arable land in America having failed to grow whtat at a ptoh't in the past year. As the effect, it need not be teared that the tiade and tailroad tulhc of tiic countiy will be much reduced. In the mam the difference will be that stocks kept bick ou farms for feeding, or for futuie consumption, will be reduced. We have, however, yet to hear what the spring lowing will extend to. In these daya of agricultural depression and loud complaints against lairdt (says the Dundee Advertiser) it is satist.ietory to report the following facts connected with the management of the Thornton and I'ittarrow estates, belong ing to Mr Ale\enderCiombie of Thornton Castle : — the lease of the farm of Westerton of Pittarrow, tenanted by Mr William Peat (whose fatliei tana ' 19 ' on tho same faun), expiies at Martinmas* day next. l>m ing the latter year of the present tenant's occupancy Mi Ciombie has moic than once voluntaiily granted a liandhomv i eduction of rent, and he lias, now in«te.ul of tin owing the farm into the maiket, amicably arianged to allow Mr l'eat to i (-main as a yearly tenant—practically a tyro yea is lease, us a year'i notice has to bu given fiom either paity. The farm has not been let a reduction of hilly 15 per cent., and the propi ietor is also to send a large sum on buildings connected both with the dwell* lii^-house and atcadily fiec of interest to tin; tenant. Another tenant on the estate, hilly half of whose lease is still to rua, has also got a very substantial reduction on the rent for the remainder of the lease ; while another tenant wlio^c leute 18 about to cxpiic has been granted a } eai ly lease at a considerable redu< tion of rent. The conduct of Mr Ciombie is only in keeping with that of his late father, who on more thnn one occasion, long befoic Agricultural Holding Acts where heaid of, voluntarily granted compensation to outgoing tenants for permanent improvements which, under the then existing law, he might have confiic ited Mii.k Ym.Ds in America.—Agiicultuiibts in this countiy are ever ieady to welcome fie»h information of a reliable diameter on dairy matters fiom their observant brethcrn beyond the Atlantic, and more especially w hen it concerns a class of cattle ao popular for its dairy pioclivitea as the well-known Aynhire bleed. For the following (acts and figures we arc indebted to a distinguished Americ m authority in dairying: — Fora peiiod of seven yeais the Chert y Brook herd of Ayrsbires, of Westoti, Mass., averaged 2033 quarts of milk per cow aunuully. The Watialiakum herd, of South Frntningham, Mass., in the same tune averaged 2425) quarts ptr cow annnally. For three years the herd of C. M. WinsioH', of Btamlon, Vermont, averaged 6586 lbs each, they averaging to go dry thirty-six days. These figures, be it remembered, included every animal giving milk in the entire herds during the years on trial. From ctieful experiments conducted by Dr. K. L. Sturtcvant with Ajr.ihire cows, for apeuodof ten years, on high feed and low feed and ordinary feed, he arrived at the following conclusion :— That the nominal jield of good Ayrshires under plain farmers' keopwg win excess of 2000 quaits per cow per yeir, and th.it improvement in feeding cm add ,"00 quaits to thejield. These tigutes give a good idea of what the Ayrshire will accomplish in the hauda of the ordinal y tanner.
