THE PRICE OF BREAD.

ro IHK UIHTUU. Hut, — In the intcro&t of tlio community of tliu Waikato I desire to express my opinion though tho medium of your valuable paper, which I am pleased to B.iy is always to the fore in advocating tho welfare of tho distiict in which it ciiculatcs, on the very high and unwarrantable price of bread. Wheat was never so low in price an at tho picsent tune, which the farmers very well know, as it does not pay them to grow it. Having to hell all their produce at such very low and unromunerativo piiceH, it is absolutely necessary for them to buy all they noed at the lowest prico possible, and let them buy their goods as low as they can, it will then take them all their time to make ends meet. I think we must be a very forbearing class to submit to these very exhorbitant charges. Why, in England the miller is paying considerably more for his wheat than the miller is paying here ; yet bread is being sold at Id per lb, and Hour will be bold at the same price. Now 1 think it in quite timo that such a state of things bhould be alteied. The millers vie not such delinquents in this matter as the bakon,, because tlioy have chopped the prico of flour to the bakers £(i or £7 pel' ton : yet the baker keeps the bioad at the samo price. I have had considerable experience in bread baking, and I kjiow very well that ljd per lb w<»uld leave tho baker a voiy substantial profit, even at the present price he is paying for flour. I am basing my calculation on the cost of pioduction here and in England. Now, if the bakeis will not reduce the piico of bread, I think tho Farniors' Coopoiativo Association would confer a great boon upon its shareholders if they will ombaik in the business. I hope the bakers will be wise aud not leave them room, I should be i cry giud if some of your readers would contribute something about the high price of butcher's meat.— l am, &c, Prouwkss. Qambridgo, March 13th, 1863.
