RECIPES.

EAaOUT TICKLE. Two gallons of a sliced cabbage, one gallon of green tomatoes, twelve large onions, chopped fine, one gallon good vinegar, one ponnd of brown sugar, one-half ounco of tumerie powder, one tablespoon fill of ground allspice, one tablcspoonful of cinnamon, one ounce of celery seed, one leaspoonful of ground clones, one quarter of a pound of white mustard seed ; salt to the taste. Some persons like the addition of three green peppers, chopped fine, without the seeds. Boil all together for three or four hours until quite tender, and do not add tho spices until it is done. Keady to use as scon as it is cold.

CUCUMBER PICKLES. One qunrter of a pound of sail., two onions chopped fine, two ounces of ginger, one ounce of black pepper, one ounce of yellow mustard, ground, one-quarter ounce of cayenne pepper, two ounces of allspice, one ounce of celery seed ; all the spices ground except the allspice. Boil in four quarts of vinegar, until it tastes right ; wash your cucumbers from the brine, wipe dry and put in jars and pour the spiced vinegar over them boiling hot.

LEMON JELLY. One pound of sugar, one-fourfcli of a pound of butter, six eggs, juice of two lemons, and rind of three lemons. Beat thoroughly together ; cook until as thick as boiled custard.

SI'ICEB FRUIT. Five pounds of brown sugar to one pint of good vinegar, spice to the taste, and boil the fruit in the syrup until cooked through, then pack in jars. Boil down the syrup and pour over the fruit boiling hot.
