THE PATERANGI CHEESE FACTORY.
Our own correspondent writes :— I paid a visit to the Pateiangi Cheese Factoiy on Saturday. Under the management of Mr and Miss Mead, it is progressing very .satisfactory. Mr Mead very kindly ga\e me any information I required. The daily supply is now about 500 gallons, and the whole of the work is done by him and his sister. The making-room is fitted up with the same machinery a,s the Te Awamutu factory, with the addition of a gang press. The manager, however, prefeis the screw presses, as they work better in his opinion. There is one fault, however, in connection with the latter, which the directors would do well to remedy, viz, the bench on which the cheese hoops are placed under the screws. This is made of inch-and-a-half timber, and as it is continually splitting it gives a great deal of tumble. It should be made of some hard timber, not less than 4^ inches thick. There would then be no giving way, and the curd would be subjected to the proper amount of pressure. The curing - room contains 525 cheeses, of an average weight of 351bs, making a total of 18,3751bs of cheese already. By means of ventilation the temperature of the loom is kept at 70 degrees, at which temperature the cheese ripens thoroughly. The shelves are all fixtures, the revolving shelves having been dispensed with. There is an appearance of cleanliness and order within the factory, which plainly shows that the manager thoroughly understands his business. I tasted some of the cheese made about the 14th of November, when the factory commenced operations, and I must say I never tasted better. It had a mellow flavour that one would not e:^pect in so new a cheese, it tasted very like some of Mr Walpole's best make, and has excellent keeping qualities The factory is worked on the American principle, but the Cheddar system will be introduced this week or next. The directors and shareholders are to be congratulated ou the success of the undertaking. It has been well conducted from the first, and the result has fully realised their expectations.
