The milk is received, weighed, and transferiod to the circular vat with a minimum expenditure of manual labour, and it- comoision into curds and whey is effected in the quietest and most regular manner by machinery almost automatic in character. Nothing but a peisonal inspection can give a ju^t impression of the internal economy of the factory, and those inteiestcdin thoindu.stiy should go and i«ce for themselves. In tho curing loom we saw some 200 cheeses, to all appearance thonmghly .sound, marketable ai tides, and we do not doubt that they will, when sent out, command a le.idy sale. The piggeries, by no means an unimportant adjunct to the factoiy, it> stocked with upw.nds of 100 pigs, but the whey pioduced is sufficient fo» a much laigei numbei, and the stock will have to lie mci eased.
