WAIKATO CHEESE FACTORY.
The supply of milk at the Waikato Cheese and Bacon Factory is giadually increasing. On Tuesday the amount forwarded was about 180 gallons, and if the present weather continues this will bo largely augmented before a week is out. We paid a vi&it to the factory on Tuesday afternoon, and were very courteously conducted over the premises by Captain and Mr Runciman, who explained the details of the operations. The day's cheeses were under the vertical presses, and those of the previous day (Monday) had been transferred to the "ganpj press." There were three of the latter, weighing about GOlbs each. One was taken out for our inspection and presented a fine appearance. It will be noted that the amount of cheese made so far exceeds one pound to the gallon of milk. The engine has not been working satisfactorily, and this has caused some inconvenience and loss of tjine, but ft j 8 expected that the defect^ will be. ranwdted jn a day pr two. AH the rest of the machinery is found to work, smoothly and well, and gives the greatest satisfaction. '. We v also inspected the site of the piggeries. place for the storage of sharps, &c. The dry food will be mixed with the whey in the tanks, and the whole will flow into troughs situated outside. The pigs will be on the ground in a few days. Altogether the arrangements are very complete, the object being to dispense as much as possible with manual labour. For assistant, Mr Runci■man has the son of a fanner in the Cambridge district, who has entered on the work with the object of learning thebusiness. Some time ago we suggested to farmers having sons that they should endeavour to so apprentice them, and we are glad to find that in one instance at any rate the advice has boon taken.
