THE PATERANGI CHEESE FACTORY.

A meetixo of the directors of the Paterangi Clieose Company was held on Monday, 20th inst. It was arranged that Messrs WiUon and Co. should begin to l.iy the concrete floor with their hydraulic lime on Monday, 27th inst. Messrs Ingiam and Co'a. tender for erecting and putting the plant together for £08 10s was accepted. Mr Ciawford, of that film, being at present in the Waikato, it was decided that the plant should be erected without delay ; accordingly waggons were despatched for it to the Hamilton factory, where it wag brought on its arrival from America. The tender of the aame firm for a four-horse power engine, everything complete, for £125 was accepted, the engine to be erected and all connections made ready for work. The doors, windows, and kauri for flooring, which were ordered from the Auckland Timber Co., and which were despatched by that company about the 13th inst., had not becu heard of on the 20th inst. The delay is entirely due to the railway authorities. Ifc is very annoying that the work should be delayed by departmental led tapcism. Some of the settlers, not understanding the co-operative system, were at first disinclined to supply milk. The directors, however, took the trouble to visit the settlers and explain the mode of working, so that difficulty has been done away with. The milk of 200 cows has alreaby been promised, and bince the farmers have come to see the advantage of the system a great deal more has been promised, and they are now more willing to supply milk in this way than that at per gallon. A meeting of those interested in the supplying ot milk will be held at the company's ofhee. There is no doubt that the cooperative system is by far the more piotitable, as if the supply of milk be large the cost of making the cheese will be very small, and the producer will get whatever the cheese fetches, less the cost of milk. In a letter to the directors, Mr Bowron stated that the directors of the Ashburton factory were offered 6^d per ft for all their cheese. The price paid for the milk was 4d per gallon, aud the cost of making Id, so the suppliers were losers to the extent of lAd per gallon, winch means a large sum at the end of the year. Mr Bowron believes less than Id would cover the cost of making, if properly managed, by which he means using machinery with all the latest improvements. That gentleman believes the cooperative to be the best, and expressed his pleasure that the Paterangi Company had adopted it. The directors at first intended to have the shelves fixtures, but, acting on information derived from Mr Bow rons pamphlet, they have ananged for some of them to be swinging shelves, — viz., shelves which can be turned in such a manner that the cheese is turned without handling, about 20 at a time can be turned 111 this manner, thereby saving an immense amount of time and labour. The work is progressing very satisfactorily, so that the factory will be ready to begin operations early in the season. — (Own Correspondent.)
