Tut: formal opening of tho nlnw com- I jKiny'a'nuw woi'ks at l-tomsey was hold on ttatiird.iy, lHth Pwmbtr, -when about 30 gentlemen, mo^l, of them shareholders in the company, wont, up from Melbourne by the in id- day tiain to Lancel'ic-ldt oad .station, whence they wero conveyed to their destination by a special tiain. The weather, uutoitiuutely, , was not line, heavy .showers, swooping down from the neighbouring hills at, such close inter\ah ao to make an eKcuision of even a few minutes a nnttcr of considerable risk. Fortunately the now works «iro situated only about live minutes' walk fiom the l.ulwiy station, which was easily accomplished between the shower. The building is of considerable size, the mam •pottiou being of comigated iion, in •which aie the engine and nulk-presei ving app.uatus. Attached to tins 13 a wooden building, in which chcesi-making is carliedon. The woiks wore staitcd only about t.i< weeks-.-go, and aioas yet, not v.otUing up to one-thiidof thui capacity, but as the iarmeis become moie acquainted with the ad\anl.ige of a good maiket almost at their doois lor all the milk they can tuinish, no doubt the supply will soon be gi eatly increased. As tlie operations of tiie company aie extended there is e\ eiy pi ospect that what is now an mdustiy"stiugghn;; into life will become one ol the most impoihiut cntoi puses m Vicfcom. That portion of the works- first visited by the company was tin; cheese - making establishment, Avhich is under the management of Mr J. 0. Slater, for several years manager of a similar establishment at Heidelboig. Along one side ot a huge ap.ii tment weic landed font laigo tanks, each capable ot holding 100 gallons of milk. Tiioy aie composed of tin, with a wooden steamjacket for the puipose of heating the milk to tlie icquned toinpcratme. The runuut used .it piesent ib Vietotian, but the company have made airanguncnls for a logular :,upply ot t'.inadian icnnet, wlneli is co'isideied by lar the best. Tlie cmd being ioimed, it is imely separated by means ot curd -knives, when it sinks to tlie bottom of tlie tank, and after icniaming a short time it is transtciieu to a Luge wooden di .lining tank, m tlie middle ot tiie loom, whole it is thoroughly drained and salted, the linest and best salt being used. Over this tank there is a large'air pipe, tlnongh winch a .sfciong dialfc of <vi is Voiced vi hot weathei, wlneli thoiouglily ventilates the apaituicnts and keeps every tiling cool. Tiio next stage is placing the ciud in the pipes, which aio l.inged along one side of the apaitmont, and aie all (i\tmcs. Tlieic aie two cream separatois on the place — one tlie cele])iatcd Aylesbury centrifugal milksepaiator, capable of separating the cream iiom ISO gallons of milk in au hour, the other La\al's patent, capable of separating the eieam fiom SO gallon 1 ; of nnlk per hour. These separatois can be ai ranged with such acauaey that any quality ot cieam lequued can be obtained. The Aylesbury patent has always been looked on as tlie most economical and useful separator \, ot patented. It possesses this advantage, that it can be woiked at a much lower rate of speed than any other separator. It works at the rate of 2,000 revolutions per minute, v> hile the Laval separator must peiform from 5,000 to (>,OOO re« olutions per minute to do the woik. Once staitcd, these machines appear to require no attention. All that is necessary is to regulate the inflow of milk so as to be equal to the outflow* of cream and skim milk, and they will run on till the day's milk has passed through. At present the separators are principally used to^supply the company's customers in fcowu with cream. The supply of milk from the farmers in the neighbourhood ranges between 000 and 700 gallons per day, and it is expected that the supply will be doubled soon after the new year. — Australasian. >
