FROZEN MEAT.

The latest reports of the progress of this important industry are more reassuring. Notwithstanding that the weather was unfavourable for the sale, the cargo of mutton by the " Europa" from Melbourne, which arrived in London on the 3rd Jan., sold at an average of from 5d to 6d per lb. The report of the Committee appointed by the new Canterbury Refrigerating Company, states that the Ilaslam machine is likely to supersede both the Giffard and Bell-Coleman machines, which up to the present have been the principal refrigerators used. Its chief merit .appears to be that the cold produced is dryer, and that there is no deposits of snow, which in the others sometimes cause a stoppage of the pipes. The causes which have led to the non-success of some of the late shipment are summed up briefly, and Me believe correctly. The action of the colonial insurance companies in London in agreeing to insure cargoes at 5 per cent., is likely to remove a great deal of the diffidence which many cautious stockownera have exhibited about associating themselves with the companies being formed. The conviction is now becoming general that with a decrease in the expenses, which more intimate acquaintance with the working industry is sure to lead to, and refrigerating storehouses is favorable, a fair margin of profit may be depended on by exporters. As we go to press, the New Zealand Loan and Mercantile Agency Company, Limited, has issued a very important circular, giving directions as to the best method of slaughtering, freezing, preparing for shipment, ami stowing ; and also some valuable hints on the shipment of dairy produce. We shall probably comment upon this more fully in our next. The breaking of the crank shaft of the machinery on board the Dnnedin was simply an accident, probably induced by ignorance on the part of those in charge. It lias no importance whatever as regards the future of the industry. The shares of the Canterbury nnd Auckland Companies are being well taken up. — N. Z. 1. Gazette.
