BOILING DOWN.
Sir. — In answer to " MentoV la»t letter, I beg to say a few words on what he ii pleased to term " No Progress " as the meaning for the " non de plume" I have used. I mean to say what I uave said, and cordially go band in hand with ** Petite Culture " in his calculations, which, I believe, are near enough for all practical purposes to point out that such an undertaking would beI a failure, as far as lending tallow out of the colony. In the first place ', Mento " must not be led away with the idea th«t on account of getting cheap loint of mutton to suit the labourer's pocket for a Short time every year, that it will be either convenient or practicable for the labourer to purchase a sufficient quantity for a year's con- : sumption, salt it down (who erer heard of such. ' a thing) and thus escape the deartimes which certainly must follow. In the second plaoe he treats me with the honour that he " does not believe " I mean " No progress or commercial enterprise, no railways, or mercantile navy, no luxuries or money, no advanc* in arts and science." I thank him. and firmly believe that he is right, such an individual if he ii in our midst, let him be cast adrift on the angry billows, never more to return to the haven of industry. If good strong arguments guide the rulers of nations why can it not do the fame in matters of local industry. Putting all arguments aside find looking, to the future Waikabo through a mirror, it may be observed that at one corner is written "Onward, march onward," while at the other is written " Stop, wait a little longer." Ido not with it beliered, for one moment, that I am entirely against exportation, but what I mean is that the slaughter of sheep for the cole purpose of tallow-mak-mg for the London market, without any other object in vi«w, would be extremely ludicrous, but -if " Mento," who ia wise enough to know right from wrong On the progreisivo principle, will<list«n I will try and point out what could be done to & better advantage ; that is in the estabHilnng'of a meat preserving establishment. Look at tfce wonderful quantity of me*t preierTed by Messn Tallerman in our sister island, Australia. Uii meats are noted for their quality all over the world; look at the quantity of tallow made by him; look at the world of thinks bestowed upon him by the backwoodsmen, and others who are not -within reach of freah meat for weeks and weeks at a stretch. Now, MrTditor,'! am afraid I have gone too faf foryour limited space, and beg indulgence, but in that corner of the mirror where I have seen " Onward, march onward " I have also j observed a msat preserving establishment, a i tannery, a soap and candle manufactory, a bone i ciushingcaill, a small village of weavers, hundreds of boys and girls spinning the wool, and also a dray loud of surplus tallow in charge of a great burly farmer, clad in a sftltof freizo'cf his own production, that beats any of Samuel Brothers, Ludgate Hill, London ; wending its way to the wharf in the distance. If this is anything like what your correspondent "Meftto" wants, m the chape of works on the Waikato, I am satisfied, and have done my duty in mentioning it ; but if ll is for tho wholesale slaugh'pr of »heep foi tallow only, I will remain as Wore, — NO EIFOETATION. Sir, — " Mento " eeemi to bo still of the opinion that s good profit could be made by the boiling down to tallow of the fat stock of the Waikato, and that " my" figures have proved "too much." Well, be that as it may, I hope "Mento" will push the matter on, and as I Lave come to the belief that the proving of the puddin/; is in tho eating of it, there is no use in fulling out beforo one is made. Ihe capital will not, bo allogother wasted in the purchase of boilerf , &c, or in the erection of suitable building*, which can bo easily transferred for other purposes in case of failure ; but 1 am certain that the subject could get much more com unent from those who have "pro»ed" my figures "too ncuoh " and let their watchword 'be "JSildesparandum,"— l ara, &c, Pititb Ctri/nntE.
