Full details are published in the Hew York papers, and names are given, in connection with the exposure of the methods of the Chic- „ ago meat packers. It is alleged that hogs dying of cholera were converted into lard and grease for sardine oil. Putrefied hams were chemically rendered odourless, bad meat was dyed, and potted ham made from mouldy beef, Further, it is stated that cattle dying of
disease were converted into tinned beef, and sausages made from floor scrapings. When operatives were mutilated the machinery was not stopped, and the lumps of human flesh were allowed to be mixed with the canned food and sausages. The revelations made in Mr Upton Sinclair’s novel, “ The Jungle,” have induced President Roosevelt, to send Commissioners to investigate Chicago methods. Their report, which is to form the basis of legislation, is to be immediately submitted.
