y ♦ lC Honey from the honey bee consists essentially of a mixture of three E ' sugars in watery solution— canejj sugar, dextroso, and levulose—to,r gether with small and variable t quantities of non-saccharino constituents, including nitrogenous or protciil mat-tor, aromatic substances, e pollen, wax, colouring matter, formic acid, and a small amount of mineral | matter containing phosphates. s These substances are present in all J genuine honeys. In addition to the s above, honeys from different sources e often contain other ingredients; for , instance, mannite is found in Kthio- ! |)ian honey, made by a kind of mosJ quito, in hollows, without wax. - P. f U.
