_ A Sydney telegram slates that an important invention has been perfected for preserving meat, the process being simple and inexpensive. The meat retains its appearance, and also, it is said, its quality. Several joints preserved on the 2nd May kept their sweetness and juiciness, and to the non-pro-fessional eye appeared almost as fresh as meat killed a couple of days ago, If the process realises reasonable expectation, it will revolutionise the dead meat export trade. A side of mutton has been sent to China, to be brought back and tested on its return. Meanwhile the fellow side has been retained in Sydney. The latter at present appears to be in excellent condition. Another lot of meat lias been forwarded to Tahiti. It is claimed that 1000 carcases can be preserved for a few shillings. Another obvious advantage lis that when discharged from the I steamer tho joints can bo cut and hung almost for any length of time.
