Wairarapa Daily Times. ESTABLISHED 1878.] FRIDAY, JANUARY 26, 1894. THE DAIRY INDUSTRY.

SECOND EDITION

i The efforts made by the Government to foßter the dairy induefry in this oolony, deserve recognition even at the . hands of their politicul opponents. We welcome Mr Valentine, the nev chief dairy expert, whose services they hare engaged, and believe him to be tbe right man in the right place, We i are pleased to learn that he is im- , pressed with the luxuriance of the pastures on the West Coast,' and trusts i, that when he visits this district he will find the condition of the toil here all that is required for sucoesßful dairying. He seems to consider the one thing needful for dairy export to ir be the cooling and- station of milk ' before it is supplied to factories, and also refrigerating machinery at i' these.establisbmentu, The other day we referred to a patent wbioh had been ■ taken out in Wellington for the manufacture of economical rofrigerating machinery, and to the gratifying fact that an exhaustive experiment had proved the adaptability of the new R machinery to tbe special requirements upon which Mr Yalentineineists. There is therefore a reasonable prospect of dairy fuctorids being equipped with '> inexpensive refrigerating machinery and bb a necessary consequence of an improved grado of butter, It ii an - admitted fact that tbe manufacture and export of butter is a profitable undertaking, provided a high and evenly graded product be supplied. There exists tome Blight practical difficulties Jn making an all round high grade of butter in the Colony and if Mr Valentine can remove them be will increase the value of every acre of grass and ol every cow ipNew Zealand, Thee too, the development of the pork industry upder the auspices of tbo Inter-marine Supply Company will go hand !n hand with the dairying improvements and give the struggling settler on i bush section an assured income. This is the day of Bmall things in dairying enterprise, bet the systematic steps which Mr Valentine appears to be taking at the instigation of the Qovcnment to placi the industry on * better footing, point to an export which may sooner jor later surpass in vplue'our meat output and even outrival onr yrool returns,
