Mli and Dairy Factories, [to the Editor.] Sib,—As the question of erecting dairy factories all over tho Colony is at presont greatly discussed, it may n fc be out of the way to draw attention to the uniform standaid of what is a gallon of milk. As the milk is always weighed instead o( lieing measuied, it would be well to fix by Aot ul Parliament a standard weight for a gallon, as the present system is very misleading to milksuppliers. They only consider the prico paid per gallon and are mostly ignorant of liow tlw weight will compare with other places, For istance, in Otago they mostly require lllbs to the gallon, whereas in Taranaki is reckoned to be a gallon. In Waira» rapa you will find ono factory requires lllbs, another IOJIbs, a third 1011 a only. Tho difference] may not Sien much, but the fact is that a man getting 2Jd per gallon of lOllis actually gets more than a man getting 3d per gallon per gallon of 1 libs. I think it would be preferable to fix the standard at lOlbs. It is used at the Mauriceville Faotory, db it greatly facilitates the office work and is cer-> tainly in favour of the supplier, I em, etc.,
