A dairyman published in our last issue a word on the price of butter. According to him the wholesale price paid by storekeepers for this commodity ranges from 5Jd to 7d, and contrasting these rates with the retail prices paid by consumers he questions tbo fair dealing of the middleman. Now we are not at all sure that be is correct on this point. If there is one article more than another upon which storekeepers lose it is butter. They havo practically to take all their ouslomers bringto them, the good theindifferent, and the bad, and thoy have frequently to take it in excess of their requirements, and to obance placing in an outside market, a very unmarketable articlt, Producers may grumble at storekeepers, but if the sentiments of the latter on the. butter trade were only uttered they would be more like &bowl that) a grumble, With the remarks made by our correspondent on the art. of making bad butter at a low price we eutirely agree, In these bo touches the real difficulty. If enough good butter were procured to Bupply" the"market, bad butter would be-unsaleable because the consum-H would liolprjohesg it. To put the trade on a proper footing the good wi)l have to drive the bad out of fbe market, and there is some indication that tbis process is already begun, A Waihakejje dairy farmer who produces butter on the factory method, told us the other day that he obtained tenpenco a pound in Wellington for all that he could make. We have therefore a wider range of wholesale prices than even that which our correspondent quotes, pne-tjiat commences at s{d and goes up to JQd. Our correspondent will confer a titled &## on storekeepers if he can, by means ,qf ap Association, take the butter trade put; of their hands,—bool) a. body, if it could grade butter for the m&rlfct, and fix a fair price for each quality, would be alike advantageous to producers, storekeepers, and consumers. Ruling the price of butter according to its grade would undoubtedly prove an advuntasd, but the greatest benefit to be secured would fc9 to produce onpugb higlvclass butter to make the inferior and unwholesome artiole unsaleable, Wo. believe that sldrflkeepers do put a high profit on good butler, but thoy are compelled to do this to balance their losses on bad butter. Were bad butter banished from the market, consumers would be able to buy a good article at a lower rate than they hoiv pay.
