The Wairarapa Daily SATURDAY, MAY 18, 1889. The New Food Preservative.
A short time ago we gave some particulars of a new food preservative which was being tested at Home. Later particulars which havo now come to band still further prove its extraordinary value. The London correspondent of the Canterbury Press, who has visited the temporary works at Homo, writes in the most glowing terms about it, and thinks that it will completely revolutionise the trade in meat and fruit. Among other things he saw, were oranges that had beeii cut in two, treated by tho new process, and kept for three months, They were perfectly juicy,' and in every way equal to fresh ones, Eggs broken into glasses had been kept in a similar way without deteriorating in the .least. Eveu a spray of maidenhair fern, whioli is one of the tenderest of plants, showed no sign of decay, A lunch was recently given by the Company which has secured the rights, and all present spoke in the highest terms of the food placed before them, which had, as a matter of course, been preserved for some time. Among those present were Sir Charles Clifford, and.raany other noted colonists. The promoters of the Company are very anxious to introduce the material to the colonies, and they feel assured that it will be at once appreciated. The powder is the invention of an American chemist, named Daniels. Its cost in England is nine pence per pound, and three-quarters of a pound are sufficient to treat five ordinary sheep. It is thought tliafc meat will be kept in proper condition by throwing a little water over it that lias been impregnated with the powder, 1 his is about the only objectionable feature in the whole process, for, as we pointed out before, it'inust have a tendency to make the meat flabby. However, thia slight drawback will, no doubt,'be overcome, and we shall be glad to see the process tried in the colonies,.
