I ; Tlio statutory meeting of the ! South County Council was held on ■.Wednesday, Novomber 28th. Present: Cra W. Booth,.< H. K. Bunriy, H. BraithWaite, A. Matthews, W.'" WraltGn and R. A. Wakelin. It was moved by CrW, Booth and seconded by Cr Matthews that Cr H. R. Bunny be Chairman for the ensuing 18 mouthy Carried. The newly 'looted Chairihwi thanked tliVcoun. It va3 resolved that a Committee consisting of the Chairnfltu, Crs Booth and Braithwaite be deputed to deal with tho matter. From Cojistablo Mackay stating that Mr Dodds refused to have anything to do with the funeral expenses* of tlie late W. Taylor. Cr Booth moved and Cr Matthews seconded, that this Council decline to elect a member to the United Charitable! Aid Board. After some discussion j Cr Braithwaite moved and Cr Wakelin seconded, That Cr Henry Bunny' beappoiuted to represent tlio County I on the United Charitable Aid Board. By the consent of the Councillors Cr | Booth withdrew liis'motion and Cr Braithwaito's motion was carried, Cr Mattliows moved and Cr Braithwaite seconded, That this Council deoliue to elect a representative to the Wellington Renovolent Institution^—Carred. It was resolved that the Chairman and Crs Bunny, Booth, and Braithwaite be appointed to tho Wairarapa Hospital Board. It was resolved that this, Council take advantage of the Audit Act in not publishing the receipts .and expenditure of the yearly accounts. It was resolved that tho Waiohine ltivor Board conservators be asked (through the Chairman) to deal with any encroachments of the ftuamalumga river near the Gladstone bridge. A motion from Cr AVrutten for a road to bo survoyed at the Lower Valley was deputed to the Featherston Road Board, It was resolved that the Clerk ascertain whether the Featherston Board have power to hand over tho public drain to a liiver Board. The Council then adjourned till the seoond Saturday in March, 1889. Canadian Cheese. A bulletin, issued by the Ontario department of Agriculture, , calls tho attention of Canadian cheesemnkers to a deterioration in their produce wbich is especially dangerous to its prestige in England, at a time when New Zealand and Australia are making great efforts to obtain <i large share of British custom. Some time ago the cause of tho deterioration was charged by the dairyuion to the had condition of the milk commonly supplied by the farmers to tho factories. Since that time, liowovei, effortsliavo been made to induce tho farmers to exercise care in tho management of their milk, and a great improvement
in tbis respect lins been reported. Yet
the cheese turned out has deteriorated with the improvement in the milk, l>. an- anomaly attributed to the carelessness and parainSbny of the owners of factories, who often employ incompetent managers in order to uare high salaries. Some useful directions for cheesemnkei'S, by Mr J. W. Robertson, professor of dairying at the Ontario Agricultural College, are added.. In reference to the alleged adulteration of Canadian cheese, a report of tlio Commissioner of Inland Bevenue has been sent from Ottawa to the Sectary of State for the Colonies, andftssued by the Agricultural Department, giving,particulars of investigations made by the Colonial Government. The chief analyst has analysed 112 samples from tbp principal cheese making districts of tho dominion, and liaa not found a single example of cheese adulterated with extraneous fat, Hi?; conclusion is that the " filled" clieeso common in : the United States is not made in Can-
