DAIRY FACTORIES.
Mr Joseph Gould on the subject of dairy factories writes to the Ohristelnirch Telegraph. " I see that there appears to be considerable difference of opinion amongst our farmers as to whether there should be one central factory for the manufacture of butteiijjf Ac., or several in the different where the milk is produced. " The arguments pro and con seem pretty evenly divided, but there appears to bo a middle course which, while giving the farmers all the advantages of local factories, combines those obtainable in the manufacture wul packing of the butter at a large ceJjpl factory.
" The plan I refer to is to have at various points where the milk is produced, various establishments where a separator could be worked, and the cream taken from the mill;. The skim-milk could at once be returned to the farmer, and the cream sent on by rail or otherwise to the central factory, I believe some such plan is found Id work very satisfactorily in Auckland, and would solve the difficulties which at present surround the proposal to have only one large central factory, while in such a factory the cream could undoubtedly,bo more prolilablv dealt with, and there would also be the advantage of all tho butter going out under one brand, and of a uniform quality."
