CIDER.
. (TOXHEEditob;). Sir.—ln your yesterday's ■•issue you copied a paragraph on. cider making, which' appeared in a, northern ..paper, and in which made to appear that, os a mutter of com, water is added to the apple juicq. As it- ia not at all ,improbable that cider will bo made in the Wairarapa 6re long, it is just as well that the error which the .northern paper lias fallen into, should not be allowed to pass without notice.' Cider contains iho more water than wine made from grapes. Were water added it would not keep for three months. The statement that a cider mill could be procured for £25 is' probably correct, but it would not be at all wise for an orchardist to run away with the idea that > such an amount would cover all expenses, for the indispensible press would cost, perhaps, twice that sum, while, there would also be required a liuhiljev •of vats, casks, etc. Yours, etg., . . J.M.R. '
