THE BAKERS AND THE ADULTERATION ACT.

Sir.-While the case Culliiune v Chamberlain Bjqs was siih judice, my mouth was sjiut; npw |lie case lias been decided ffjlj you allqw me a few brief remarks on sje decisjon. In fqriner lettera both, to tiie local and Wellingtqn papery referring tqthe Adulteration Amendment Act, 1882, 1 pointed out that such an Act, if property constructed, would be beneficial, not only to tlje public, but tq ftq |rade. Praptioecl men. whp have had tq suffer by unprincipled interlopers, lowering the price and the weight of bread at the same time, will understand this. The Act in its present form, if enforced to the letter throughout the Colony, will simply be an engino of oppression, and will have the effect of driving numbers out of the trade, or at least to relinquish bread baking to a great extent. It is clear that in the present instance, judgment has • been given against the weight of evidence. I would ask if it is a rule that the oiras prohndi falls upon the prosecutor, why this case, has h.epn npde an exqoptip.n ? Eja Worship i§ qipte right ih'lpMni'tifin <jf the word '•.batch.' 1 " ft is applied tQ farjey as well as to plain or hoqsehqli} bread"; but he is in error in supposing' (bat fancy brad «) qf "finer quality;" although bread qf a finer quality may be made, s,till Hie ghape, and not the quality, baa from time immemorial determined that class ef bread known as "fancy," with which an oven may be filled, and it weuld bo described as a batch of fancy bread. It is evident what the effeot of His Worship's decision upon the making of this sort of bread will be; bakers that make Ooburgs-Swodenbergs, Exhibition loaves, Deyons, or Tinbread, are liable to prosecution. lam&c J.
