The New Zealand Industrial Gazette for the cureent month gives an interesting report of a new Blenheim industry, a rabbit canning factory, now in full swing under the auspicies of Messrs Foster and Gosling. The supply for the facsory is obtained from rabbiters, or men who shoot and trap rabbits on their own account, These men receive from Foster and Gosling three shillings and threepence per dozen for shot rabbits, and three shillings and sixpence per dozen for trapped rabbits,. Already some of the run-holders have voluntarily offered the free use of their carts and horses to take the rabbits into town, and have oxpressed themselves willing to pay a certain, price, generally about ono shilling per dozen, for nil rabbits which are too small for canning. Over a dozen men are making good wages in trapping and.'shooting f rabbits for the factory, and fresh hands I are taking up the work every week. ' The number of labbila tinned amounts ' to 3,000 per week. The whole of the j work is done in a building of one ( floor, measuring seventy feet ami by ■ thirty, As rabbits aro brought in they : are hung upon nails on the walls, until a fresh boiling is commenced; I this is generally in the afternoon, i Then they are taken down, the heads ' and legs chopped off, (they have already been gutted by the rabbitters) and they are skinned. After the , inside has been thoroughly cleaned the ( carcases are allowed to soak all night i in salt water, to take out all the blood, i In the morning tho first thing done J after taking them out of the water is to chop them into flour, Scalding , for five minutes, to shrink the flesh, j follows. Afterwards tho meat is ; woighed out into lots of 21bs 2oz each. , Each lot is packed into a 21b tin, the extra 2ozs being allowed for loss of weight in boiling. At the southern i end of the building is tho skin drying shed, This is not the least important part of the works, for if it wero i not for the value of tho skins for export rabbit-preserving would never pay. The skins are dried by being hung separately on wooden battens 2,500 at a time. In the London market they are worth from 2s 6d to 2s 3d per dozen, Tho London price obtainoi for the goods turned out by Messrs Foster and Gosling is from 12s to 13s 6d per dozen, The Catalonia, British King and lonic each took shipments varying from 100 to 200 boxes, The demand for looal consumption is very small, but this is quite natural in a place where rabbits are regarded as vermin., Besides the boiled.rabbit, which Iniakes up the largest portion of the ,'expdrt output, the firm turns out curried rabbit, rabbit and onion, and rabbit and bacon. A few tins of fresh Picton herrings have also been tried with good success, . but the irregularity of the supply of the fish prevents a very desirable development of the industry in this direction. It is rather a drawback that the work of preserving rabbits can only be carried on in cool weather, in warm weather the flies attaok the dead rabbits so ferociously that it is impossible to use them quickly enough, Messrs Foster and Gosling intend ultimately to include fruit preserving i and mutton preserving in their business I lines, which will enable them to keep 1 their works going all the year round. j At present eight hands are employed in i. addition to the tabbiters, It is a pity' ■ : that we have no Foster & Gosling in ' the Wairarapa district, for we are certainly in a position to supply the raw material in the. shape of rabbits, and it would be some consolation to us for the - grass they consume if we wero able to [ vend their flesh in the London market. In the Middle Island private enterprise is turning a colonial pest to a good ■ account,' und the example set is a good ' one. Possibly our Farmers' Club when it gets under weigh will be able to expresssome opinion on canning rabbits, j - I Mr Buchanan in another columa of '• our present issue replies to the attack recently made upon him by Mr R. The Stanfield and Dark Company opened to a moderate house at the Theatre Royal last overling with F, W, Hume's oomedy of " Once Bitten, Twice Shy," which was played with considerable spirit itnd evoked hearty laughter and applause, Then- followed, the musical sketch entitled "Quits," in which a number of .character songs and clover impersonations aro introduced.
