JEWISH MODE OF SLAUGHTERING CATTLE.
Mr Philip Pbillipstein, a gentleman ap. pointed by the Jewish community to superintend the slaughtering of cattle in Sydney, appeared at the Water Police Court there to answer the oharuo of Mr George Webber, that he did, on the. 25ih August, cause to be cruelly ill-treated a certain animal, to wit, a bullock. Mi George Webber, Inspector for the Animals Protection Society, deposed that he was at the Glef • Island abattoirs when slaughter' iug was going on, and the defendant was directing the operations in respect to one bullock; some men first threw a large'rope around the neck of the beast j the rope which had a running noose in it, was also carried around one of the fore legs of the animal j two men took a .Uirn round the posts, and the beast was violently thrown to the ground three or four times; the gronnd consisted of a cement floor; the mon then passed a chain round the off hind leg of the animal; a hook was thrown over the chain, and formed a running noose; two men at a windlass pulled the bullock up by the one leg, throwing it over violently on its lack again; the bullock was drawn out to its full length, the bullock's pole touching the ground; Theohain stripped the Bkiu off the animal's leg; while the bullockjwas in position the men got a " tree," a ,piece of wood about four or five feet in letath, and upon which the animal was lung after it waR alaughtered-and openiflrtje mouth of the bullock, thrust it in of about two feet j the two men then levered the head of the animal back by means of the " tree;" the defendant then cut the animal's throat; during the operation the beast'waa continually bellowing and showing every sign of terror and pain; witness spoke to the defendant, and asked him if what had taken place was done under his direction, and he said it was; the operation which he had de. scribed lasted about 15 minutes; there was an instantaneous mode of slaughtering, by pithing animals and otherwise, and the boast might have been drawn up in a different manner; the cement floor was as hard as stone; complaints had been made to the society of the way in which animals were treated at the abbatoirs, and he (witness) was instructed by his committee to tako proceedings! '1)8 plan adopted on the pecasiop in question was an nnnecossavily cruel way of slaughtering animals; it could he done in much less time, and with much less pain, The case was dismissed, as the mode adopted had been the custom for over thirty years and was proved to be similar to the way thoy slaughter cattle for the Jews in England, ,
