CANDIED PEEL. Skins of 6 oyanges or lemons to lib of sugar. Put the sjan& m salt and water to soak for a tew days ; then put them in a pan of h'esh cold water, boil until the head of a pin goes easily m. Remove fiom pan and put in a basin, boil the lib of sugar and a breakfast cup of water for a few mmutos, pour over the peel in basin and aljow it to stand about one week. Then pour the syrup into a pan and allow it to boil up, put the peel in and boil until it lqoks> clear, which will be in 15 or 20 minutes. Take it out and spread on a dish, put a little syrup into each hollow, dust fine sugar over and put in the sun or any warm place to dry and cai}dy, Put awaj in a jar when quite dry.
