HOW TO MAKB TWO GALLONS OP CHILI BEEE. 25 small Chilis. 21bs sugar, loz. whole ginger (crushed), boil for two hours in 1£ pints of water, and strain into cold water previously boiled. Then add one dessert spoonful of acid and two of cream of tartar, and one dessert spoonful of «ssenee of lemon. It is then ready for use. We have received two good recipes in answer to J.C.8., one from M.M. and one from Mrs 0. Thanks to both.
CEEAM PUFFS. No. 1. Ingredients. — 4 eggs, 3ozs. butter, sozs, flour, 1 breakfast cup of boiling water. '• Mode.— Put the butter in an enamel saucepan, pour boiling water over it, when boiling stir in the flour with a wooden spoon until it leaves the sides of the pan, when cool, or nearly so, add eggs, one by one, unbeaten. Stir well until the mixture has a shiny appearance. Have a hot oven, flour the tray, and drop on in large teaspoonfuls, leaving room to swell. Bake about half an hour. Avoid opening oven door as much as possible. Open sides and fill with cream or, jelly.
No. 2. ilk butter, fib flour, 8 eggs, 1 pint boiling water. Put the butter into the boiling water in a sauce pan, let it boil up, and then stir in the flour, but don't let it boil. Leave^ it in the pan till cool. Beat up the yolks of the eggs, and add in the pan, then beat the whites till stiff, and add them (just, mix), then put small piece on a tin, and bake in a quick oven till golden brown. Then make a hole in them and fill with whipped cream flavoured jfco taste. " Agnis asks recipe for Bhubarb jam.
