KEEPING FISH FRESH
’ Fish may be kept fresh for some time it it is rubbed with salt, both in- ' side and outside after it has been thoroughly cleaned. It should be ! turned and rubbed daily. When it is needed it should be soaked in cold l water to take some of the surplus salt I out. using one or more waters accordI ing to the degree of saltness pre- | ferred. Another method is to use ■ brown sugar, in the proportion of 1 dessertspoonful to 31b. of fish. This , should be sprinkled inside the fish, , which should be kept on a flat plate land turned often, to enable the sugar to soak well in. The fish may then be ■ salted and smoked.
