A LUNCHEON DISH
THAT WILL APPEAL. Salmon Kedgeree.— Melt 2 tablespoons butter oi’ margarine in a pan and add 1 large tin flaked salmon. Add 1| cups cooked rice, the coarsely chopped whites of 2 hard-boiled eggs, 1 teaspoon finely-chopped parsley, 1 teaspoon curry powder, the grated rind of J lemon, salt and pepper to taste. Stir very gently over a low gas until mixture is thoroughly heated, then dish up in a dome shape and sprinkle over the hard-boiled egg-yolks, rubber through a sieve or finely chopped, and a little finely-chopped parsley.
