BUTTERMILK ROLLS

THE HOUSEWIFE SHOULD LIKE THIS RECIPE.

Take 3oz. sugar, 3ozs. butter, 1 egg, 2 teaspoonfuls cream of tartar, 1 teaspoonful bicarbonate of soda, lib. flour, 1 cup buttermilk, and a pinch of salt.

Method: Cream the butter and sugar, add well-beaten egg and the buttermilk with the soda dissolved in it. Stir in the sifted flour, cream of tartar and salt, turn on to a floured board, knead lightly, and roll out half an inch thick. Cut into rounds, glaze with egg, and fold over to half, glaze over tops again and bake about 10 minutes in moderate oven. Serve with butter.
