RICE TIMBALES
WITH CHEESE SAUCE. Melt 3 tablespoons margarine in a saucepan and fry 1 finely-chopped onion until soft, but not brown, add 1 teacup rice and cook until rice is a straw colour, stirring all the time to prevent burning. Add 2 cups boiling stock or water and continue to cook until rice is tender and liquid absorbed. A.dd pepper and salt to taste, and if liked 1 finely-chopped and fried green pepper. Press rice into wellbuttered cups or moulds and turn out on to a flat ovenproof dish. To | cup thin white sauce add |lb. processed cheese and stir over hot water until cheese is melted. Add cayenne to taste and a little more salt if necessary. Pour over rice and place dish in hot oven until a nice brown, or it may be browned under griller.
