SAVOURY RICE

A CHANGE FOR LUNCH. Well wash 1 cup rice and cook until quite soft in plenty of boiling stock _oi salted water. Drain well and mix with 1 dessertspoon butter, 1 tablespoon tomato sauce, salt and pepper to taste. In the meantime, slice and fry 4 med-ium-sized onions. Place them in the bottom of a casserole dish, on top of onions, place 6 medium-sized tomatoes, peeled and cut into thick slices. Sprinkle with salt and pepper and 1 teaspoon chopped parsley. Cover with the prepared rice, sprinkle over a little grated cheese, dot with butter, and bake in a moderate oven for 40 minutes.
