CARROT DISHES
TRY THESE. These two carrot dishes are worth trying:— Glazed Carrots., Take several carrots, 2 tablespoonfuls brown sugar, 1 tablespoonful butter, a little grated nutmeg. Scrape the carrots ancl cut them into slices A-inch in thickness. Parboil for 3 minutes. Drain and place in a buttered casserole, with about A-inch of water. Season with a little salt and grated nutmeg, and sprinkle heavily with brown sugar. Top with little pieces of butter. Place the -lid on the casserole and cook in a hot oven for an hour to l.i hours. Carrot Salad.
Take 1 breakfast cupful of grated raw carrot, A cupful chopped onion, A cupful chopped radish, 1 head of lettuce, 1 tablespoonful lemon juice, mayonnaise.
Mix the carrot, onion and radish together and add the lemon juice. Mix well, and arrange on lettuce leaves, cover with mayonnaise just before serving, and grate a little carrot on top.
