CROUSTADE
A SURPRISE DISH. Trim and cut a slice off the top of a loaf of stale bread and scoop out the middle, leaving a hollow case. Crumble the removed centre until fine. Melt 2 tablespoons margarine or good dripping in a frying pan and fry 2 minced onions and 2 tablespoons finely-chop-ped green pepper until soft, but not brown. Add breadcrumbs and fry until a fawn colour. Have ready any of the following: 11b boiled pork sausages, 1 large tin salmon, cooked fish, or leftover meat, finely chopped. To fill the. case, place a layer of crumb mixture on bottom, then a layer of sliced sausage or left-overs, etc., a layer of peas and finely-diced carrot, both cooked | and mixed together, then a layer of well-flavoured white sauce. Continue) until case is quite full. Replace lid and) fix on with toothpicks. Spread loaf' with a little butter or margarine and] bake in a moderate oven for about 45 minutes. Remove lid and add a few bacon rolls and a little chopped parsley. Replace lid and serve.
