CAULIFLOWER SOUP
SOMETHING FOR A COLD DAY. Cut a small cauliflower into flowerets and wash well, then soak in warm salted water' for 1 hour. Drain, then wash it again. Place in saucepan with a little salt and enough water to cover and cook until tender. Strain and rub through a sieve, keeping back the liquid in which the cauliflower was cooked; return water to saucepan and bring to boiling point. Then add 2oz. tapioca put through a mincer, and simmer until tapioca is clear (this takes about 25 minutes). Mix loz. ground rice with a little cold milk, then add to it 1-i- pints white stock and 1 pint milk or all milk. Bring to boiling point, stirring all the time. Add the cauliflower and the tapioca stock. Season with salt and pepper, and, if liked, a little nutmeg. Bring to boiling point and add a little cream. Serve with sippets of toast.
