STEAK IN CASSEROLE

SOMETHING FOR DINNER. Cut I’.lb. stewing steak into neat pieces and roll in seasoned flour. Melt 1 tablespoon good dripping in a pan and fry steak quickly until brown. Remove meat and place in a casserole dish. Peel and slice 3 onions and fry in pan in which steak was fried, then lift out and cover steak. Add 1 dessertspoon flour to pan, cook a little, then add 11- cups stock or water. Stir until it thickens a little, season to taste, then cover the steak. Cook in a moderate oven for about 2 hours. Remove lid and skim off any fat, then add about 12 small skinned egg tomatoes, a few forcemeat balls, and if liked a few thin slices of carrot. Cook for another half hour, then sprinkle With finely-chopped parsley and serve.
