FISH PANCAKES

A BREAKFAST DISH. Pour It cups boiling milk over 11 cups fine white or brown breadcrumbs, add 2 level tablespoons butter, salt and pepper to taste. Let stand until milk is absorbed. Add the grated rind of 1 lemon, 1 teaspoon very finely-chopped parsley, 1 cup finely-chopped cooked fish, 1 cup flour, and 3 level teaspoons baking powder. Rub a little butter in the bottom of a small fry pan and let get very hot without burning. Drop some of the mixture in pan and spread out with a spoon. When the pancake is full of bubbles turn carefully and look the other side. Serve very hot with a slice of lemon.
