A DINNER DISH

RICE CAKES WITH VEGETABLES. Cook half pound rice in two cups boiling salted water until water is absorbed, then add three-quarters pint milk and continue to cock until it is thick and rice tender. Add 4oz. grated cheese, salt, pepper and cayenne to taste. Dip 2 dessertspoons in hot fat, then cut and shape rice into oval shapes. In the meantime, peel and slice 3 or 4 onions and fry in a little good dripping until soft. Place these in a casserole or flat ovenproof dish, then about 3 cups carrot balls previously cooked in boiling salted water. Sprinkle over 1 tablespoon grated cheese, then place rice cakes on top. Sprinkle with a little more grated cheese, then a few buttered crumbs and bake in a hot oven for 20 minutes.
